Beat the heat with No-Bake Cookies



These are our 12-year-old's favorite cookies to make (we don't complain about "having" to eat them, either!).

Easy, fudgy, and one-pot cleanup.

Colorado Cookies

½ c. butter
2 c. sugar
½ c. cocoa
½ c. milk

Mix and bring to boil over medium heat. Boil 1 minute.

Remove from heat and add:

½ c. peanut butter
3 c. quick oats
1 T. vanilla

Drop by spoonful onto wax paper (which is much nicer to photograph than my clingy plastic wrap, above) and let cool.

Enjoy!

My 10 year old son just made these yesterday--only no boiling involved in our recipe. For some reason, they didn't "set up" that well. Oh well, they were still yummy!!

Yum! I have very fond memories of making these - they were the first cookie I could make that turned out perfect every time, and I made them often after school when my mom was at work and my brother and sisters wanted a treat. (Looking back, I can't believe it was OK for me to have the stove on when mom was gone....! But I was the oldest, and a girl.)

I REALLY like it that you call them Colorado Cookies.

We love these too! We call them Preacher Cookies since for those living on the mountain you can see the Preacher down at the bottom and by the time he gets to your house the cookies are done. :)

Okay, I've been gonna make these since I saw this post ages ago and I finally did! They are cooling on the table now and my kids are drooling, waiting for them to cool enough to eat.

And since I licked the spoon, I KNOW they are gonna be good! :P
