Chocolate fudge cake to the rescue

It's been a tough week - the kids have been troopers, what with having to get up getting up four hours earlier than they did last week, put their feet into socks and shoes for the first time in months, remember school supplies, homework, volleyball knee pads, and permissions slips.

Amid all this chaos was my husband's birthday. Chocolate to the rescue!

The kids put an entire package of candles on his cake to remind him just how old he is (they helped him blow them out - except what's up with that hand over the little one's mouth - she must've wanted to blow them out before the song!).



But he didn't care. Chocolate helps you forget all your troubles.

If you've had a crazy week like mine, maybe it's time for some Chocolate Fudge Cake.

I'm not a cook, and I can't make a cake pretty to save my life, but this cake is delicious.

Here's what's left of ours.

Chocolate Fudge Cake

1 c. real butter
4 oz. (4 squares) unsweetened chocolate
4 eggs
2 c. sugar
2 tsp. vanilla
1 c. flour
2 c. pecans (I use walnuts, too)

Melt chocolate in double boiler with butter. Beat eggs with beater until fluffy, then add sugar. Add chocolate mixture. Add flour and vanilla. Stir in pecans (my kids are not big on nuts so I put a layer of nuts on top of one of the layers of the cake. That way the nuts end up on the bottom of the cake - they can pick them off if they want).

Pour into 2 greased and floured 8" round pans. Bake at 375 degrees for 25-30 minutes (less for 9" pans). DO NOT OVERBAKE!

Icing:

3/4 stick soft butter (6 T.)
1 box (1 lb) powdered sugar
2 Tbsp. cocoa
1 tsp. vanilla
1 c. pecans (I don't put them in the icing unless I'm bringing this for an adult gathering!)
Cream or evaporated milk

Beat butter till smooth. Add powdered sugar, cocoa, and vanilla. Add cream 1 T. at a time until icing is creamy. Stir in pecans.

Serve in thin slices - it is VERY RICH!
